Weed Infused Caramel Rice Krispy Treats

So I know a lot of you have been asking for weed infused recipes ever since I posted my recipe on how to make weed infused coconut oil, and don’t worry, I’m working on them! Here is the first of several to come! These Infused Caramel Rice Krispy Treats are so decadent, perfectly chewy, and of course VEGAN. And they’re gluten free? Sign me up! Also, I planned these out to be 20mg THC per rice krispy treat, but you can definitely adjust the amount of weed oil depending if you want to make them stronger or weaker. If you follow the recipe I have for weed oil, you’ll be averaging 100mg THC per tablespoon of oil, so it will just be a little math on your end to figure out how the dosage will be if you’re changing it from this recipe! You can find my weed oil recipe here ! But let’s just get into this recipe, it really is so easy to put together!

So to make these delicious treats, you only need four ingredients. That’s right. Only four! You’ll need crisped rice cereal, vegan marshmallows (My Dandies is the brand I used, and is my personal favorite because they melt really well), vegan butter (we used Earth Balance, but any vegan butter would do, or if you want to increase the dosage of these rice krispies, you can replace butter with weed coconut oil entirely!) You can also spice these guys up by adding other ingredients, like folding in mini My Dandies vegan marshmallows at the end, or adding mini vegan chocolate chips.

So the first and main step is to melt down the marshmallows. This takes a little bit longer than normal because vegan marshmallows need a little more time to melt compared to regular marshmallows. All you need to do for this is add your vegan butter, weed infused coconut oil, and vegan marshmallows into a deep pot over medium heat. You’ll need to stir these pretty frequently with a rubber spatula (anything else will just stick to the marshmallows and make a mess), to prevent them from burning. Now I know you must be thinking, “Bri, you said these were CARAMEL rice krispy treats, and you already listed the ingredients without caramel being one of them. HOW?!” Well, let me tell you. So once your marshmallows are pretty much melted, turn up the heat to medium high, and let them sit without stirring for about a minute, then stir. Continue this pattern of sitting and waiting, then stirring, a couple of times until the marshmallows begin to create a caramel. You can do this step for as long as you want, depending on how much caramel you want to form in the marshmallows, or if you want to add more without totally burning them (I wouldn’t let them caramelize for longer than like 5-6 minutes), you can add some of my Coconut Caramel Sauce into the mix before mixing with the cereal!

How to Make Cannabis Infused Rice Crispy Treats

Even though we are all adults here, we all crave the comfort foods of our childhood from time to time. Honestly, who can resist the ooey-gooey goodness of melted marshmallow mixed with warm rice crispies — especially when they are infused with your favorite plant? Talk about an irresistible combination for nearly anyone but diabetics.

Making a good batch of weed infused rice crispy treats comes down to using high-quality ingredients and following a few simple directions. Use this helpful step-by-step guide to get started with your first batch of canna-crispies:

You Will Need…

  • 1 bag miniature marshmallows (use fruit flavored marshmallows to change it up)
  • 2 tablespoons unsalted butter (cannabis infused butter)
  • 2 tablespoons coconut oil (cannabis infused coconut oil)
    • Note: You can choose to use both infused butter and coconut oil, or just use one or the other.
  • 5 cups crispy rice cereal (give or take)
  • ¼ teaspoon almond extract (try a raspberry or strawberry with fruit flavored marshmallows)

  1. Spray bottom of cookie sheet with cooking spray (or parchment paper makes easier cleanup)
  2. In pan over medium heat, melt butter, infused oil and extract together
  3. Continue heating over medium heat and slowly add marshmallows to the mixture, stirring constantly to prevent scorching
  4. When the mixture is well blended (remember don’t overcook) remove from heat and immediately add cereal in small portions until the cereal is evenly covered (tip: coat your spoon with a little oil first)
  5. Spread out onto cookie sheet and press down with spoon into desired thickness
  6. Allow to cool and then cut into individual portions (15-20 servings)
  7. Chocolate lovers can drizzle canna-shell chocolate across the top before cooling

Caution: Too Much Caffeine Can Negatively Affect Your Experience

If using chocolate in your recipe, please consider that caffeine is found naturally in cocoa beans, so any chocolate has a little bit of the stimulant. Candy bars generally have less than 10 milligrams, but the darker the chocolate, the higher the caffeine content. Some bars can have as much as 30 milligrams, almost as much as a can of soda. Some chocolate is fortified with additional caffeine for an energy boost and can have as much as 60 milligrams of caffeine, about the same as a cup of tea.
